Cantonese dishes use a variety of ingredients, including fresh-water fish, seafood, birds and more. Usually Cantonese use condiments like oyster sauce, fish sauce and fermented soya bean sauce. The dishes have a fresh taste and very tender texture.

Shandong cuisine is known for its large selection of materials and different cooking techniques. These dishes are well known for seafood and soups prepared with scallions.

Sichuan dishes are known for using prickly ash and hot pepper and has a very flavorful cooking style – which is probably why it’s so popular in America.

Huaiyang cooking is very strict in selecting ingredients because they emphasize the cleanliness and freshness of the ingredients. These dishes have a very fresh and mild taste because they pay close attention to the natural juices and flavours of each ingredient.
